As many of you know, I have become completely consumed with Zumba. I salsa, merengue and cha cha cha my days away and it's never enough! After years of doing half-assed workouts and feeling like I would never get my prior dance body back, I can safely say that thanks to Zumba, I'm back baby!
All this Celia Cruz, Sergio Mendes and Orixas have had me craving some Latin-inspired cuisine. So today I made my version of Gazpacho. My Spanish housemates in Urbino made it the traditional way - stale bread, olive oil, garlic, tomatoes and spices, blended until creamy. But I like it on the chunky side, with as many vegetables as possible.
Here's today's version, which wasn't like the last one I made and probably won't be like the next one. Depends on what's in the fridge, really.
4 vine ripened tomatoes
1 yellow bell pepper
1 green bell pepper
1 ear corn
sweet vidalia onion (I'm an onion hater so I only put a little)
big swig of extra virgin olive oil
cumin & cayenne to taste
salt & pepper to taste
juice of 1/2 lime
Chop the vegetables to small cubes. Season and mix well. Blend half or more of the mixture, whatever you prefer. Add to the rest. Serve with a big chunk of crusty bread or tortilla chips.
