I love the symmetry of nature. Look at that? Is that not gorgeous? I want it on my kitchen wall.
The key to eating healthy for me is to not deprive myself of anything. If I want pasta, I’m going to eat it, but load up on the good stuff: veggies. This is called peas with pasta, not the other way around, because there should be more veggies than pasta. Got it?
Fresh peas are in season and they are absolutely delicious. Sweet and crisp, like biting into spring itself.
This recipe is for one person, but you can double it as necessary.
Peas + Mint With Pasta
1 tbs olive oil
1 cup fresh peas
1/4 cup yellow onion chopped
1/2 tsp salt
pinch sugar
finely chopped fresh mint
1 cup small pasta (ditalini or cavatelli)
Sautè chopped onion in olive oil until it starts to sizzle. Add the peas and add enough water just to cover the peas. Add the salt, mint and sugar and lower the heat to simmer. Cook until the peas are tender, about 10 minutes. In the meantime, cook the pasta in boiling, salted water. Toss together with the peas and some of their cooking liquid. Add more salt and fresh ground pepper to taste. Serve immediately. Buon Appetito!
