Yesterday morning I was staring out the kitchen window at the animal kingdom that is our backyard; we have hummingbirds, baby red squirrels, chipmunks, a woodchuck, deer, bunnies and god knows what else, and listening to some Doris Day. You know, normal. In the lovely, "Tea for Two," she sang the lyric,
"Day will break,
and I will wake,
and start to bake,
a sugar cake..."
I used this fabulous recipe for just two cupcakes and invented a blueberry frosting. I whipped up some butter, milk, confectioner's sugar and a handful of blueberries. It made for a delightful second breakfast and I had something to sink my sweet tooth into as I twirled around the kitchen singing Doris and watching the animals play. Ahh, I love not working.
2 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon vanilla
1/4 cup flour
1/4 heaping teaspoon of baking powder
pinch of salt
1 1/2 tablespoons milk
Preheat oven to 350 degrees. Line a muffin pan with 2 liners.
In a bowl, add egg white and sugar and whisk until combined. Add in vanilla and melted butter and stir until mixed. Add flour, baking powder and salt and stir until smooth. Stir in milk. Divide batter equally between the 2 cupcake liners. Bake at 350 for 10-12 minutes, or until cake is set. Let cool completely, then frost as desired.
You should definitely make these for your love, your mom or a lucky friend. :) Buon appetito my lovelies!
