Have I mentioned before how much I love not working? I've been pretending that the blog is my job this summer and that has been making for some good food fun around here. Today, for example, I blended cucumbers and put them through a sieve, squeezing out their delicious juices to make a cuke drink. (Basically heaven, as far as my love for cucumbers is concerned.) It was a great project and the result is so crisp and refreshing!
Cucumber Cooler
3 cucumbers, peeled, seeded, and coarsely chopped
1/4 cup water
1/2 cup fresh mint leaves
1 lime, thinly sliced
24 ounces club soda
2 tablespoons agave nectar or honey
In a blender, puree cucumbers and water. Pour through a fine-mesh sieve set over a large bowl, pressing on solids (you should have about 2 cups juice.) In a pitcher, mash fresh mint leaves with a wooden spoon. Add cucumber juice, lime, club soda, and agave nectar or honey; stir.
Hope this cools you off! Wouldn't it be great with a splash of vodka for a summer BBQ?
