Picnic Rice Salad
adapted from this recipe
for the rice
2 cups cooked rice
1 small red onion chopped
1 yellow pepper chopped
2 grated carrots
1 cup frozen peas, thawed
1/2 cup raisins
for the dressing
1/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon dijon mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
Combine the dressing ingredients and whisk thoroughly. Pour over the cooled rice, blending well, and add the vegetables. Taste and adjust seasonings if necessary. Serve at room temperature.
