crunchy tuna lettuce cups

I’ll never eat normal tuna again. Not only is this recipe crazy healthy (fiber and protein) but it’s so full of crispy ingredients that make you want to keep crunching for more! I rolled up the lettuce leaf and ate it as a wrap out on my balcony with the smell of my neighbors’ grill charring some sausages, and I hadn’t the slightest bit of lunch envy. 
Crunchy Tuna Lettuce Cups
(serves one)
1 can tuna in water
1/4 cup chopped celery
1/4 cup chopped carrots
1 tbs chopped walnuts
2 tbs greek yogurt
1 tsp chopped fresh parsley
pinch salt + pepper
lettuce leaf
Combine all the ingredients and arrange in the lettuce leaf to eat in wrap form.

  1. I would have never thought of putting greek yogurt in it to make it creamy but awesome...it looks so super healthy and I loooove tuna!

  7. I know what I'm packing for lunch tomorrow! I love that you used greek yogurt instead of the mayo and added walnuts for a richer crunch. Can't wait to try this out!
