curried chickpea couscous

Curry has been practically a food group for me this week, ever since we picked up a huge bag of it at a specialty store in Bari last weekend. It’s like my palate has just been craving other flavors so much that it can’t get enough. (I know, I know. I can hear you already. What?! But you live in Italy!) Well, I’m more than ready for a change, and putting curry on everything has seemed to do the trick. That and sriracha. Thank goodness Manu is a fan, or else he’d be making lots of trips to our pizzeria downstairs. (Yes, downstairs. Dangerous.) 
Curried Chickpea Couscous
1 cup couscous
1 cup chickpeas (cooked)
1 3/4 cup water
1/2 teaspoon curry powder
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon red pepper (optional)
Bring the water to a boil. Take it off the heat and add the chickpeas, couscous and curry. Give it just a little stir and then let it sit covered for a few minutes or until most of the liquid is absorbed. (I like there to be a little extra for moisture.) Add the olive oil, salt and pepper and stir gently with a fork. Serve.
This would make such a good side dish or even a quick lunch. You could add a handful of chopped spinach and raisins to make a salad of sorts or even throw in some grilled chicken and call it dinner. I'm going to have the leftovers with steamed broccoli and a squeeze of sriracha, (It's like I'm making up for all the years I didn't have it by eating it every day.)

    Yum, this is great! I love curry :) One of my go-to dishes for a lazy night is cooking rice and then mixing it with chicken, veggies, coconut milk and curry. SO GOOD. I love couscous, I think I'll give this a try!

  4. My mouth is watering like crazy. I have some good quality curry that I use a lot but I never thought of this! Couscous is a regular here and I have a large bag of dried chickpeas, just begging for my attention. This may be another recipe that turns into one of my favs!

    woah! That's so odd, it's less than 2 euro here and i've found them in every super market! I wouldn't think Italy and Germany would be all that different.
