You will never buy another overpriced, preservative-packed energy bar again after you try these. Soft, sweet and packed with a nutty, rich flavor that just feels healthy. Organic and uncooked, these balls will pick you up during that 3 p.m. lag that always makes me crave M&M's. And they couldn't be any easier: while the milk and honey boil on the stove you can pulse the other ingredients. Then just mix together, form into balls and roll in coconut flakes. You can use any nuts you like, or even substitute raisins or any other dried fruit for the figs. A pinch of cinnamon or protein powder, if you're into that sort of thing, adds a bit more oomph. Doesn't it just feel good to make things from scratch?
[pretty good-lookin' fig, am I right?]
Martina's Energy Balls
(here's the original recipe)
1/3 cup honey
1/4 cup plain soy milk
1 cup regular oats
1 tablespoon sesame seeds
1/4 cup nuts (any!) chopped
4 dried figs, chopped (soak in water if necessary to make them softer)
Bring honey and soy milk in a medium saucepan to a boil over high heat; boil 1 minute. (Kitchen tip: put some oil in the measuring cup before putting the honey in, and it will slide out super easy!) Set aside. Put coconut on a plate or in a shallow bowl and set aside. In a food processor, pulse oats, sesame seeds, nuts, and figs until finely ground. Pour into a
bowl and add honey mixture, stir. Wet your hands with water and roll 1-tbsp. portions of mixture into balls; then roll in coconut.
