Well, friends, today I’m a whole year older and wiser (maybe). I always like to reflect on the year; it’s kind of inevitable as you get older and they flash by too fast. Remembering them keeps them closer, like a kite that’s slowly slipping away. (Wow, that was deep! Maybe I am getting wiser!)
I have much to be thankful for and excited about this year: planning our weddings (yes, plural), continuing the new direction I’ve taken the blog in, anticipating possible career opportunities next year and more! Plus I’m feeling stronger than ever (I can do five whole push ups! Real ones!) and I can sense that I’m slowly coming into the best years of my life. Though, Kate says those are your 40's.
I’m kicking off this 26th year with a recipe that’s fast, healthy and gorgeous, as my English friends would say. And it’ll be a new series too, that I’m calling, whip it up, since that’s what I’m thinking every time I make something fast, healthy and gorgeous. “I’m just going to whip up this zucchini salad.” So get in your kitchen, whip this up, and we can all think about the great years ahead.
[One of Manu's colleagues - Giorgia - is a huge fan of the blog and reads it every day! She was so sweet and got me this hazelnut flavored honey while she was on vacation in the mountains and it is spectacular! She also picked me up some really good curry while she was in Bari recently. That's the way to my heart, folks. Food presents.]
Honeyed Ricotta Toast

1 slice whole wheat bread
2 tablespoons fresh ricotta
2 drizzles of honey
1/2 green apple
a good pinch of cinnamon
Give the ricotta a rough mix with the cinnamon. Spread it on your toasted bread and layer slices of the apple on top. Drizzle the honey over the apples and sprinkle with more cinnamon at the end.
