classic chocolate cupcakes and vanilla frosting

I'm not much of a baker, even with all my years experience helping Kate make sweets (I licked the bowl, mainly). Thankfully, I had Brittany here to help me whip up a batch of classic cupcakes for Barbara's little birthday party that we hosted last night. The girls had never had a cupcake in their lives, and I couldn't wait to see the look on their faces when they tasted frosting for the first time. To say they LOVED them would be an understatement!

Notes: We used this Real Simple recipe for the cake and frosting and I wouldn't change it a bit! For the fancy piping without a real piping bag, all you have to do is take a piece of parchment paper and wind it into a cone shape, keeping the opening at about a 1/2 inch circle. Scoop a spoonful of the frosting inside and squeeze down until it reaches the tip of the bag. Be sure to keep your top hand firmly pressed on the bag or else frosting will come out the top! (see picture 4). Keep a steady hand and make sure to frost only cooled cupcakes, or else the frosting will melt.

Today Brittany left and I'm super sad, so I'll definitely be having the one leftover cupcake after lunch to cheer me up! What's your favorite cupcake flavor?

  2. I can't imagine a world without cupcakes! You did a really good job for someone claiming not to be a good baker! :-) My favorite cupcake flavor is a toss up between cookies n' cream and carrot cake. Aaaaand now I want a cupcake for breakfast.

    There's a cute little coffee shop here in Malta that does incredible sweets. My favorite has to be their red velvet cupcakes with cream cheese frosting. YUM!

  9. Chocolate cupcakes with vanilla frosting is definitely my favorite! (although I wouldn't turn my nose up at red velvet either!) How can the girls have never had a cupcake? is it not done in Italy?!? Haha I would feel so deprived!

    i know, isn't it crazy? they don't do cupcakes or frosting! their cakes are usually frosted with whipped cream.
