homemade peach frozen yogurt

Tomorrow will mark the first Saturday in months that I will have off and you have no idea how much I am looking forward to it! A real beach day awaits me! Manu thinks I’m crazy because I check the weather every half hour and send him an iPhone photo of it - “now it says 82 degrees!”  Ahh, yes. No lessons with children who could care less about English, a new bathing suit, two Glamours to read and now some homemade frozen yogurt to bring!
As you know, I like to make things that are fast, healthy and delicious. I’m not very equipped in our tiny kitchen, so this fro-yo is a no equipment necessary recipe! Sure, if you have an ice cream maker it’s ultra creamy and rich, but who has the counter space for all these contraptions? This method is just as good, and if you start with super ripe peaches, you will have such a fragrant, fruity and tangy yogurt! I kept having to resist the temptation to devour the entire thing during the stirring process. :)
Peach Frozen Yogurt
(based on this method
1 very ripe peach
1 cup greek yogurt
1 tbs sugar (or agave nectar if you want to be even more healthy!)
Peel and chop the peach and puree it in a food processor. Transfer to a plastic or durable container. Add the yogurt and sugar and stir well. Place in the freezer and every 30-45 minutes give the mixture a vigorous stir - this will break up the ice that may form and keep it creamy! Continue to freeze and stir for another 2-3 hours. Serve immediately!
I'll be tweeting a bunch so you can follow along on our beach day - you can count on some gratuitous photos of Italian boys in a speedos! (It’s been years, but they still crack me up!)
