mediterranean pasta salad

Dearest blog pals, I have been alluding to it all week, but I just need to remind you again that Brittany Lauren Miller my truly bosom friend (I’ve been reading too much Anne of Green Gables) is coming here to visit me on Sunday! Cue the exclamation points!!!!
She and I have been buds since we were both in love with the same boy in 10th grade. It didn’t matter who he was going to ask out, just as long as it was one of us. He faded away like the rapper he loved (Nelly) but our bond remained. 
I’m dedicating this super simple and fresh pasta salad to her, since it’s so something she would make and love. Chop ingredients, let marinate in the fridge while you hug your best friend, serve over pasta. Done! Exclamation points!!!!
Mediterranean Pasta Salad
1/2 pound bow ties
5 vine ripened tomatoes
1 can tuna in olive oil (let a bit drain out)
1/4 cup chopped olives (any kind)
1 tbs capers
1/2 small lemon, juiced
1/4 cup fresh basil, chopped
1 garlic clove (left whole)
1/2 tsp salt
ground black pepper to taste
Chop the tomatoes and throw in a bowl. Add the olive oil, tuna crumbled with a fork, chopped olives, capers, lemon juice, basil, garlic clove, oil, salt and pepper. Stir and cover with plastic wrap and let it sit in the fridge. 30 minutes is good, but the longer, the better it will taste, up to 3 hours. Cook the pasta according to al dente package directions, strain and rinse with cool water. Toss directly in the bowl with the tomato mixture. (Take out the garlic clove!) Adjust seasonings if necessary and serve with more fresh basil on top.
