whip it up: super fast guacamole

This weekend we're having a family gathering on Cape Cod and I couldn't be more excited to sleep in a cabin, stay on the beach till dusk, eat mint chocolate chip ice cream (my favorite) and laugh with everyone around the fire pit! I'm busy packing important things (snorkel, Italian card games, paddleball) but I have just enough time to whip up some guacamole to bring. It's a chip-dip that I can't get in Italy and I could eat bowls of it! Absence makes the heart grow fonder, even when it comes to food.
Super Fast Guacamole
2 avocados
1/2 tomato, diced small
1/4 teaspoon salt*
1/4 teaspoon red pepper*
1/2 lime juiced
1 teaspoon fresh chopped cilantro
Combine all ingredients in a bowl and mash with a fork to desired consistency. *Add more to taste, along with one minced garlic clove if you like it. I'm a garlic hater (sad, but true) so I always omit!

Want to know something else? Last night, in a tiny boutique, I found my wedding dress. It was one of those moments of destiny and I can't wait to tell you more about it. Let's just say, my heart is still all a-flutter! Buon weekend, amici!

    Europe has not learned to appreciate guacamole and consume it in the quantities that we do back in America. Maybe one day they will discover what they've been missing. Until then, enjoy it while you can surrounded by family and friends!

  18. Avocados are so cheap here and they're available in abundance! I never used to like them until I moved here. Now I can't get enough guacamole. :)
