My Italian girlfriends have this great tradition. We pick a night and get together for a aperitivo, happy hour. Whoever is hosting prepares little snack items and beers or wine. The girls all show up together (late, because everyone's late in Italy) and we chit chat, eat, drink and sometimes end up dancing in a living room. Later on we meet the boys in town. Do you do happy hour? Here are some easy snacks you can have ready if friends are coming by this weekend!
Citrus Hummus: This is super fresh and fast, and definitely not your average hummus! Your friends will love the touch of sweetness, and you can serve it with any crackers, chips or raw veggies that you like!
Baked Potato Chips: A revelation in the snack department, you better not underestimate the power of this recipe. I am not a potato chip fan, but give me a bowl of these and you know I'm going to be hiding them from Manu.
Spinach and Ricotta Rustic Tart: Some pre-made puff pastry can do wonders when you have little time to cook. Just fill it with whatever you have in the fridge, here spinach and ricotta, and serve to your friends in slices. Easy and versatile!
Frozen Pea Hummus: This is so creamy and rich tasting, but super low calorie. Plus, you probably have all the ingredients right now! On rounds of crusty baguette, it's divine.
Roasted Salty Almonds: You can't enjoy beers with friends without a crunchy snack item, am I right? These almonds are just as addicting as the potato chips up there so watch out!
